This is a really quick and easy energy ball recipe that is perfect for an everyday nutritious snack or for on-the-go to put in lunch boxes. They offer a combination of protein, carbs, and fats, plus they’re totally customisable and portable. Homemade energy balls will also save the money as store-bought bars and bites can be quite expensive. There are only 3 main ingredients with the optional addition of extras. These are my go to when I need a pick me up and they easily fit in the fridge/freezer to save for a later date. Protein powder can be added if you want to boost the protein kick. This would make them perfect for taking to the gym or before or after a workout. This recipe makes approximately 8 energy balls, depending on the size.
INGREDIENTS:
30g oats (or buckwheat flour)
2 tablespoons almond butter (or any other nut butter of your choice)
1 tablespoons coconut oil
Natural sweetners and flavourings could include ingredients such as cinnamon, maple syrup, honey, cacao powder, protein powder, crushed nuts, etc.
METHOD:
In a large bowl place the oats, coconut oil and nut butter and combine with a spoon until roughly mixed.
Add the sweetners and flavouring if using and then mix again.
Add a dash of water into the bowl to make sure the mixture is combined fully.
Take a tablespoon of the mixture and roll into a ball using your hands. Continue doing this until the mixture is used up.
Place the rolled balls into the freezer for around 1 hour, then remove and store in an airtight container in the fridge.
